The Vintage: The 2021 growing season started with lovely warm weather and largely stayed warm and dry throughout the summer. Fall weather was mixed with some rain events, but good vineyard management and terroir allowed the grapes to hang well into the season to achieve optimal ripeness.
Winemaking: The grapes were hand-picked and hand-sorted on October 20th and destemmed before being left to soak on skins prior to fermentation. After 2 days, fermentation was inoculated. The skins were punched down by hand twice daily during fermentation in small open-top fermenters. Once fermentation finished, the wine remained on skins for 3 days before being gently pressed. It was transferred to French oak barrels (20% new, 80% older) and aged for 14 months before being lightly filtered and bottled.
Description: From a single vineyard in Four Mile Creek, this wine shows intense aromas of bing cherry, raspberry, dried cranberry and beetroot. The palate continues with kirsch, mulberry and blackberry backed by sweet tobacco, tomato leaf, cracked pepper and cured meat. A stony minerality leads to a silky texture with elegant tannins balanced by acidity, giving this wine the ability to age for 8 years or more.
