Grilled Shrimp with Fresh Cilantro, Lime & Peanuts

Serves 4

2  limes
2 tsp  fish sauce
½ tsp  granulated sugar
1 lb.  large shrimp (about 16)
2 tsp  grapeseed oil
1 ½ Cups  chopped cilantro
½ Cup  salted peanuts, coarsely chopped
2  green onions, chopped
salt & pepper to taste

 Note: you can substitute basil for the cilantro if, like Nicolette, you HATE cilantro. She’s not allergic to it, she doesn’t have an aversion to it, she hates it!

Method:

  • Using a fine rasp, zest limes into a bowl.  Cut one lime vertically and squeeze out the juice.  Whisk in the fish sauce & sugar.
  • Preheat your BBQ to high.  Toss your shrimp in a bowl with the oil and season with salt & pepper.  Place on BBQ (or use a grill basket)and grill until pink and firm to the touch — about 2 – 3 minutes each side.
  • Remove the shrimp from the grill and toss in the fish sauce mixture.  Add the cilantro, peanuts and green onion and toss again.  Squeeze the juice of the remaining lime over the shrimp.  Enjoy with a nice bottle of The Good Wine 2010 Dry Riesling!
