ABV: 12.8%
RS: 2.2 g/L
The Vintage: 2021 was a long, warm vintage, with a lovely summer but some rain at harvest. Despite the tricky harvest period, we produced wines of lovely ripeness and character.
Winemaking: The grapes were hand-picked from our estate vineyard and hand-sorted on October 31st, destemmed and left to cold soak on skins prior to fermentation. Fermentation took place in small open-top fermenters with the skins punched down by hand twice per day. Once fermentation was finished, the wine remained on skins for 3 days before being gently pressed off skins. It was then transferred to French and American oak barrels (28% new) and aged for 22 months.
Description: The nose showcases bright strawberry and blackcurrant, with mulberry, raspberry, tobacco leaf, cocoa nib and oregano in the background. The palate is medium-bodied with blackcurrant and ripe strawberry layered over tomato leaf, cinnamon, dark chocolate, coffee and crushed stone minerality with a long finish. This Cabernet Franc can age for 8–10 years or can be decanted and enjoyed now. Pairs well with cured meat, hard cheeses and BBQ.
